I love this recipe, it came from the Country Test Kitchen show on PBS Sat. mornings, my favorite cooking show.
Popovers
3 lg eggs
2 c milk
3 Tbs melted, slightly cooled butter
2 C bread or all purpose flour
1 tsp salt
1 tsp sugar
mix eggs, milk and butter, mix dry ingredients, stir together a little at a time, no lumps! cover with plastic let rest up to an hour, grease and flour popover pans, or spray well with non stick spray. Fill cold pan almost to top should make 6 to 8.
put in 450 oven 20 min, do not open door, reduce heat to 300 and continue to bake another 35 - 40 min, take out, and poke a small hole with a skewer in each, place back in oven another 5- 10 min. Poke again when done. ( this allows some steam to vent).

Those are some tall popovers! I've always just made mine in regular muffin pans. Now that I've seen your impressive photos, I may have to invest in a real popover pan.
