GoodBye Gluten- Review






A few years ago I had some health issues that brought gluten free living onto my radar. Something I had not been familiar with suddenly became a possible way of life. Since then I have come to know many people with a gluten intolerance, allergy, Celiac Disease or just wanting to eliminate gluten from their diet.
 A staple of our diet is bread, trying to live gluten free is a challenge with toast and sandwiches the norm. Gluten free bread can be frankly, dismal.

A new option is hitting the market. Goodbye Gluten!
The main problems with the breads I had tried previously were crumbling texture, the need for storage in the freezer and a bland taste. Eating without toasting was a nightmare until now,

  I should tell you I don't live gluten free, I fortunately don't have to, but I would and I did eat this bread!

Goodbye Gluten has a wonderful texture that does not crumble, it makes great toast and great sandwiches. Sliced bread, fresh on the counter without being frozen. In fact recommended storage is not to freeze!

I tried both white and multi grain. I was quite partial to the multi grain myself.
A very good bread, for non gluten foodies as well as the gluten tolerant.

Sangria and Punch



Easy Summer Party Drinks
Sangria
Place 2 bottles white wine
1   2 liter bottle Fresca
Fresh cut fruit, I used orange slices, raspberries and blueberries
Let set 1 hour before serving, be sure and label so your guests will know there is alcohol



Non Alcohol Punch- Low calorie too!
Mix 2 packages Crystal Light lemonade
4 quarts water
3 cans cherry lime low calorie soda
Fresh cut fruit

Popcorn Party- Cake Style






Poppin good time! Your guests will love a little popcorn- cake style. Perfect for a birthday, Oscar party or movie night.
Supplies for cake
1 prepared cake, cooled and sliced in half. I used a pan that was 8 X 9.5 X 3 Pyrex 2.75 liter glass pan.
Chocolate fudge ice cream topping- 1 jar
1 c crushed sandwich cookies
1 batch homemade fondant or store bought. Die 1/4 of it red.
Vanilla icing
Caramel popcorn
When cake is completely cooled, slice and spread center with fudge and cookies, place remaining half on top. Ice entire cake with crumb coat (thin layer) Refrigerate 30 min. Roll out white fondant and place over top and sides. Roll and slice red and using water "stick" to white to create stripes.




 

Stick caramel corn on end of cake, just tucked inside fondant overhang.


Cupcakes
1 batched baked cupcakes
mini marshmallows
yellow food coloring
vanilla icing



Tear mini marshmallows in half and stick back together making popped corn.

Ice cupcakes and top with marshmallows, dilute yellow food coloring with water and paint on for butter look.


cut stripped red and white paper and create popcorn bags.

Peanut Butter and Jelly Sandwich Cake



It's a sandwich....it's a cake! After receiving my latest issue of Food Network magazine I had to make this easy, fun cake for our neighbor's boys.
Of course every adult in the room wanted a piece also.-including me!

Cake
*easy version
mix a white cake mix according to package directions
Bake in an 8X8 or 9X9 pan lined and buttered with parchment paper. You will have cake left over.
Remove from pan, cool completely

When cool, slice off the top of cake to even and create a bread appearance. Slice remaining cake in half so it looks like two pieces of bread.

Filling
Jelly
Peanut butter frosting
    Mix 1/2 c creamy peanut butter
     1/2 c softened butter
     3-4 Tbs milk
     powdered sugar- enough to make a spreadable consistency.
Cover bottom layer of cake with peanut butter frosting, letting it gently slide off the edges for effect, top with jelly and place remaining cake on top. Slice into two triangles.



Option 2
Homemade White Cake- Better Homes and Gardens New Cook Book
Preheat oven to 350
2 1/2 c all purpose flour
2 c sugar
1 tsp baking powder
1/2 tsp baking soda
salt
1 1/3 c buttermilk or sour milk
1/2 c softened butter or shortening-( note using butter will slightly yellow the cake as will vanilla that is not clear. This cake was made with butter and it still looked like bread. For pure white use regular shortening such as Crisco and clear vanilla which can be purchased anywhere cake making supplies are sold.)
1 tsp vanilla
4 egg whites

Butter and line 8x8 or 9x9 pan with parchment and butter again.
Combine flour, sugar, soda, powder, and salt. Add vanilla and milk and shortening, mix on low for 30 seconds, then increase to medium and beat for 2 minutes, scraping bowl.
Pour into pan- again you will have extra
Bake until center tests clean, about25-30 minutes.

Scotch Eggs






Hearty Breakfast Food or a Protein Charged Lunch or Dinner

I came across a recipe for these a while back and have made them a few times since, I call it man food. My husband loved them and he usually doesn't get excited for food unless Little Debbie or Captain Crunch is in the picture.

First
hard boil eggs, just like normal.
I make my hard boiled eggs by placing eggs in cool water and heating over med until they come to a boil, I let boil 3-5 minutes depending on size of eggs.
Cool with running water and peel.

Next
Wrap seasoned sausage around each peeled egg. You will need about 1 average roll of sausage for 5 or 6 eggs, again depending on size.
Cover egg completely, sealing sausage by pinching, try not to have egg showing and uniform thickness.
Place in preheated 350 degree oven in 9 X 13 pan

cook until sausage is cooked through and browned, about 25- 30 minutes.

When Sam's club contacted me about a summertime cooler challenge I was immediately on board. This summer has been a hot one! Nothing soothes like fresh fruit and no one does fruit like Sam's Club.

 Raspberries- need I say more?
I think we all love berries, colorful bursts of juicy ripe berries is the key to any fruit cooler in my book. Rich in antioxidants and high in fiber they add a healthful boost to the start of your day.
Paired with apple and pineapple, they give a smooth, sweet blend to round out my cooler.

I will be giving you two options to make the RaspApple Cooler.


First up Juicing
If you have a juicer you probably already know the benefits of juicing.

 RaspApple Juice

quarter 1 medium apple, no need to peel or core when juicing
1 cup of peeled pineapple
1/2 c raspberries
Juice and drink immediately
Serves 1



  A lovely sunrise juice full of color and healthful benefits.
Tip- when eating pineapple go ahead and eat the core! (easy when juicing)
the core is high in Bromelain, a pain and inflammation fighter.

Next Up
RaspApple Protein Smoothie

In a blender blend on high
1/2 c raspberries
1 c pinapple, peeled and cored, see tip above
1 medium apple, peeled and cored
6 oz water
1 Tbs honey
1 scoop of Pure Protein Plus
ice cubes
Serves 2
This may be made without the protein powder and will be just as good, but why not add a scoop of great tasting whey vanilla protein and up you diet by 23 grams of protein to get you off to a good start or pick you up during the mid day.
