Stuff with cheese, soft cheeses work best like goat cheese or cream cheese. Season cheese with salt, pepper and fresh herbs to taste.
Wrap a half piece of bacon around and bake at 350 until peppers cook through about 30-40 min. If your peppers are small go ahead and cook bacon 1/2 way in microwave, they will take less time to cook.

I have soooo many jalapenos in the garden. What a great idea to use them this way. We stuff shrimp like this but that doesn't use up many of the jalapenos. Wish I had one today.

Can't believe you put this recipe up!!!! It is literally the next thing I am cooking tomorrow!!! My mom just gave me the recipe and I was so excited about it!! The only difference is that in my recipe the bacon is cooked and crumbled in the cheese mixture!!! Yummy no matter what!!!!
