Ingredients for 2 large Salads
1 large head Romaine lettuce, torn
2 green onions, chopped
red and yellow peppers, chopped
1 large cooked chicken breast, shredded
1 mango, peeled and chopped (be sure mango is ripe, it should be soft and the skin yellowing)
Parmesan or Asiago cheese
home made crunchy Italian croutons, or store bought
You may use salad dressing if you like, but the flavors mesh so well, it doesn't need it.

English Muffin Bread
This bread is dense which makes it great toasted or grilled. I made it with whey but it can be made with milk also. It makes 4 loaves so go ahead and half it the first time, but it freezes well.
2 Tbs sugar
1 1/3 c warm water
4 pkgs dry yeast
Cornmeal for sprinkling
12 cups all purpose flour
1/2 tsp baking soda
4 c whey or milk
4 tsp salt
Dissolve sugar in water, add yeast and let sit 10 min.
Grease 4 loaf pans and sprinkle with cornmeal.
Combine 6 c flour and baking soda. Set aside
In medium sauce pan heat whey or milk and salt over low heat until lukewarm. Stir yeast mixture and add warm whey to it..
Pour into flour mix and add remaining flour. Dough it stiff.
Divide dough into pans and let rise until center is 1 1/2 inches above pan.
Bake at 400 for 30 minutes.

Chocolate Marshmallow Cookies
Chocolate Marshmallow Cookies
1/2 c butter, softened
1 c sugar
1 egg
1/4 c milk
1 tsp vanilla extract
1 3/4 c flour
1/3 c baking cocoa
1/2 tsp baking soda
1/2 tsp salt
large marshmallows, any flavor, cut in half
Icing
6 Tbs butter
2 Tbs baking cocoa
1/4 c milk
1 3/4 c powdered sugar
1/2 tsp vanilla
non perils, nuts or chocolate candies to topping
Cream butter and sugar, add egg, milk and vanilla.
In another bowl combine flour, cocoa, soda and salt. Mix together and drop by spoonfuls onto ungreased cookie sheets.
Bake at 350 for 7-8 min.
Remove and quickly place 1/2 of a marshmallow on top of each cookie,cut side down, return to oven for 2 min.(I used caramel marshmallows) Remove and cool on racks.
Icing
combine butter and cocoa and milk in saucepan, bring to boil and boil for 1 minute, stirring constantly.
Add powdered sugar and vanilla, stir until smooth. Dollop over cookies and place candy or nut on top. Drizzle with remaining icing.
Cool completely

Grandma's Linens at a Table for Two
My aunt sent some of my grandmother's linens, perfect for a Valentine's table since I am not much into pink.
The cloth, embroidered piece and the napkins were all hers.
Non alcoholic brew to go in our original toasting glasses from our wedding 23 years ago.
