Kitchen Tour
The china hutch came from a garage sale, we refinished in red, with a white crackle overlay.
Roosters and enamel ware on top.
Inside is a gift from my step mom Rachel. My dad made the miniature rolling pin and lefse turner. The hand written lefse recipe is inside along with a photo of my Grandma Irene, and great Grandma Mary. The bottom photos show Leo, my Grandpa. The aprons are made from fabrics of my grandmothers and the little striped potholder is from g'pa's old Coke a cola shirt, he worked for them for many years!! Isn't it fabulous!
Lots of canned goods and herbs growing.
Old glass jars are a favorite of mine!
Copper cookie cutters and molds too.
Coffee station #1 and gadgets hung on a great rack from Ikea.
The pantry door, usually covered in drawings and messages by my children's friends, I usually hide the chalk!
You can peek inside the pantry since I just straightened it.

Rhubarb Tea Cakes
This is from Martha Stewart's magazine, these cakes are sooo moist and yummy they disappeared quickly and I am definitely going to make more!
1 1/2 c flour
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1 stick, (1/2 c) unsalted butter at room temp
1 c sugar
2 large eggs
1 tsp vanilla
1/2 c sour cream
2 c rhubarb, diced into 1/4 inch pieces.
Preheat oven to 350 and grease or spray 8 4x2 1/2 mini loaf pans I used a little larger pan and made 4 loaves.
Mix flour, soda, powder and salt. In another bowl beat butter and sugar until fluffy, add eggs and vanilla, beat until combined. Add flour mixture alternately with sour cream.
Stir in rhubarb.
Bake about 40 min, depending on loaf sizes, until golden and center tests done.

Rice Krispie Coconut Cookies
Now I am not real big on raw cookie dough, but...this one I like! Plus these are one of my personal favorite cookies. They have such a great texture.
1 c brown sugar
1 c white sugar
1 c oil
1 c butter room temp
1 egg
1 tsp vanilla
1 tsp soda
1 tsp cream of tartar
1 tsp salt
3 1/2 c flour
1 c coconut
1 c oatmeal
1 c rice krispies
2 c chocolate chips, any flavor
Cream butter oil and sugars until creamy, add vanilla and egg. Sift together flour, soda, cream of tartar and salt, add coconut, oatmeal and rice krispies. * you may substitute applesauce for the oil
Stir in chocolate chips and bake on sprayed pan or baking stone 10-15 minutes or until golden brown and crunchy. 350 degrees
