Mississippi Mud Bars

This recipe is taken from A Passion for Baking by Marcy Goldman

bars
2 c sugar
3/4 c unsalted butter, cut into chuncks
4 large eggs
2 tsp vanilla
1 1/2 c flour
1/3 c cocoa
3/4 tsp baking powder
pinch baking soda
1/8 tsp salt
1/2 c chopped walnuts, opt.
1/2 c chocolate chips
1 1/2 c shredded coconut, opt.
1 jar  7 oz marshmallow creme
Icing
 3 c powdered sugar
1/2 c unsalted butter, softened
1 tsp vanilla
1/2 c cocoa
1/2 c evaporated milk
Preheat oven to 350, spray an 11 X 7 pan, place on parchment lined baking sheet
 Blend sugar and butter , add eggs and vanilla, blend well. Fold in flour, cocoa, baking powder and soda, salt, blend well. Fold in nuts, coconut and choc chips. Spoon into prepared pan. Bake until set, about 25-30 min. Spread  marshmallow creme on hot cake then refrigerate uncovered for 3 or more hours.
Icing- Blend all ingredients until stiff and glossy. Using a knife dipped in water to help with smoothing, spread icing on chilled bars, Chill well again. Serve cold, these are messy!  mmm
